1 eggplant washed, cut into 1 - 2 inch slices (don't peel) and pre-microwave for about five minutes until it is soft. You'll also need spaghetti sauce, cooking spray, fat free grated mozarella cheese and stale bread. Line baking pan with foil and spray w cooking spray. Pour in enough spaghetti sauce to cover the bottom of the pan. Layer the eggplant on the bottom of the pan in a single layer. Sprinkle the rounds with cheese and top with a tablespoon or two of sauce. Bake in oven @325 for about 30 minutes, enough to heat the sauce and melt the cheese. Meanwhile, cube the stale bread. Cooking spray the frying pan and brown the cubes in it. Add a seasoning - I like Johnnys Garlic Spread and Seasoning, and stir well. Plate the eggplant when done and sprinkle cubes on top.
