I’m happy to report the mariachi band has made a run for the border. I awoke headache free, not even a mild one. I consider this a major victory.
I stayed on the diet today, ate much the same as the past two days, so I won’t bore you with the details. I did get a stark reminder today of how temptation to cheat myself out of a healthier body will always be there. I received a late holiday package in the mail today from relatives in Belgium. I eagerly tore open the package and faced a beautiful box of chocolates. Belgium chocolates. If you’ve never had chocolates direct from Belgium, they are to die for. I drooled for a few minutes and then walked them out and tucked them into a corner in the freezer where they’ll stay until I meet my goal.
The bronchitis is getting better and I look forward to getting to the gym tomorrow.
I am so amazed at the number of people who have signed up to take this journey to good health with Greg and I. I expected the money would be a good motivator, but this has overwhelmingly surpassed my expectations. Once the final weigh in deadline has passed, we’ll update all of you with the final numbers – how many are participating, what our total combined weight is, oldest and youngest participant, etc. I’m sure you’ll be just as amazed as I am.
Some of you have emailed me with comments as to why you decided to join this challenge. Some are in it for the money, but many of you are in it for the right reason- a healthier lifestyle. It will be interesting to see how many approaches to better health will be represented in our group.
A tip straight from the doctor who conducted my physical at Mat-Su Regional Medical Center: Take 2 grams of glucosamine every day to improve your joint health. Our joints take a toll from carrying around extra weight and as we age. I’ve added the supplement to my daily diet. The effects are not felt immediately, but I’m told I’ll see a difference in about a month.
I’ll end with my recipe to share:
Fake Mashed Potatoes
1 package frozen cauliflower
¼ cup skim milk
1 tsp. butter
½ tsp. salt
Cook frozen cauliflower according to package directions. Drain. Placed cooked cauliflower, milk, butter and salt in food processor or mash with potato masher until creamy. Low fat, low carb and tasty, too!
