My recipe is low fat and very easy.
Preheat grill.
Ingredients:
Pace Medium Salsa or Picante Sauce (You can use your on favorite brand or homemade)
Chicken breast ( I pound each breast until it is about 1/2" thick. Grills faster this way.
Brush each breast with a little olive oil.
Grill chicken as you normally would and when almost done brush with salsa cook about 5 min then flip and brush the other side with salsa.
I serve chicken cut up on top of a green salad with a few black beans and whole kernel corn sprinkled on top. You can top with a little cheese but if you watching calories don't add too much.
Before I started my diet I added Salsa ranch dressing and Chili Cheese Fritos for Crunch. I haven't looked but they probably make a lot fat version of this dressing. I just ust more salsa mixed with a little vinaigrette for my dressing.
