Scratch Brewing Company in Ava, Illinois, forages its ingredients for their unique farmhouse beers from their farm just five miles from the Shawnee National Forest. With a hyper-local focus on flavors derived from their forest and farm’s seasonal native plants like hickory, dandelion, nettle and chanterelle mushrooms, Scratch’s beers are as unique as their grounds. Plus, a nearby greenhouse supplies even more ingredients for their specialty beers.

The brewery sources its artwork locally as well. Brett Douglas Hunter supplies the floor-to-ceiling art and sculptures found throughout the grounds.
