Prune Cookies

Mix all together 1/3c canola oil, 2T orange juice concentrate, 1/2c applesauce, 1/4c liquid egg substitute.

In separate bowl mix 1/3c brown sugar, 2c rolled oats, 3/4c whole wheat flour, 1/3c unprocessed bran, 1 1/2t allspice, 1/2t baking soda

Stir combined liquids into dry ingredients and add 6 oz cut up soft prunes and 1c chopped walnuts.

Drop by teaspoon onto pam sprayed cookie sheet. Bake at 325 about 30 minutes until golden brown. Store some in airtight container. If they get hard add a piece of sliced apple to soften; freeze the rest.

Note: To soften prunes, soak in boiling water until soft, then drain.
