Super Sunday can still be super

Argh! The only thing more tempting than dieting during the holidays is watching those calories on Super Bowl Sunday.

Yes, today’s the day. The Big Game, the Grand Pooh-Bah, the Mac Daddy of all football games. I love football and I love the Super Bowl. I can’t remember the last Super Bowl that wasn’t part of some party — and no Super Bowl party is complete without the absolutely worst food in the world for you. Unfortunately, what’s worst for us is also what’s the most decadent, tasty and craving-causing treats ever invented.

Nachos, chips and dip, wings, pizza, sandwiches, burgers, brats, barbecue ,,, hold on a second while I wipe the drool off the keyboard.

OK, cleaned up.

Seriously, as much as I look forward to Super Bowl Sunday, I took precautions for today’s showdown between the undefeated New England Patriots and New York Giants (fearless prediction: New England 37, New York 17). First off, I turned down the Super Bowl invites I received (thank you all) and plan to stay home where I can control the temptation. Second, I went to the store Saturday and got some things for my own party, should I so choose.

Got some stuff to make my own more healthy pizza. My mom suggested it, so I said I’d try her idea. Using a whole-grain tortilla as the crust, you put a little sauce (I’m using Healthy Choice spaghetti sauce), some fat-free mozzarella cheese and favorite toppings (not the bad stuff like pepperoni). I chose ham and pineapple. Before putting it together, spritz the tortilla lightly with oil and bake in a 450- to 500-degree oven for a few minutes for the tortilla to get hard and crunchy. Then assemble the pizza and put under the broiler to melt the cheese and heat the other ingredients.

I haven’t tried it, but I’ll find out before game time if it works.

Moving on, I want to thank all those who have had encouraging words, including the nice woman who actually took me up on my invitation to call me and prod my stubborn, lazy behind. We had a very nice conversation and said she’d call back to make sure I’m doing OK.

Folks, that’s what this is all about. I don’t know about yours, but my legs aren’t built to kick my own rear-end when it needs kicking, so I depend on others to cozy up with their Converse.
